Our May meeting sounds like a good 'ol time. Weather permitting we'll be sitting outside at the picnic tables enjoying the aroma of cooked meats watching Phil Wingo work his magic. 

Phil Wingo the Co-Owner and Operator of Pork Mafia located in Alsip Illinois will be joing us and roasting a whole hog that day for our group. Phil will be describing his technique as well as answering questions through the process. Phil has not only traveled the country with his BBQ knowledge but is known in international BBQ circles for his skills. In addition Phil offers BBQ consultating, dry rubs, sauce and various BBQ classes from those just starting out and wanting to learn more to restaurant Pitmasters and everthing in between.

Rob Schrum aka Frank of Franks Backyard BBQ will be suppling additional items to round out our meal for the evening.

What started out as cooking for friends and family has turned into a full on BBQ restaurant. Rob and his wife Patty started out years ago as what might be called a side hustle today. They were working outside under pop up tents next to Reichert's Tavern in the town of Brunswick a mile due west of where we are now. Rob was still working a full time jobs in a whole different field yet he still made time to pursue what he enjoyed doing. Patty's full time job was raising their two children. She had picked up years of F&B experiance as a server helping her manage the service and front of the house.  Rob left his full time job years ago after he and Patty decided to take a leap of faith and open a small brick and motar BBQ shop for carry out only. After a couple years in that building they were quickly outgrowing it and relized their next step was going to be a huge one. That brings us to today in their current building. Frank's is truly a family run business with their two adult children involved as well. We like to tell people is that unlike other places Frank's does not have ovens, fryers, or an exhaust hood nor will you ever find a microwave in that building. Everything is cooked on those smokers from the veggies to the desserts. Ok, we do make the Mac and Cheese and the cheesy spicy corn on induction cook tops inside. Frank's has been voted "Best BBQ of the Region" the last three years in a row. We continue to wait on the exciting news of this years winner when the Times makes the announcements.
